Recipe for (Vegan) Apple Sauce Apple Bread Made With Coconut Flour Recipe

Dry ingredients:

1 cup of coconut flour

1/2 cup of baking flour (optional...you can use 1 1/2 cup of coconut flour for gluten free version)

1 3/4 tsp baking powder

a pinch of salt

a pinch of cinnamon powder (I grated mine from the cinnamon stick)

Wet ingredients

1/2 cup of Earth Balance non hydrogenated margarine

1/3 cup of brown sugar

1 tbsp of cane sugar

1 tbsp of oil

1 tsp of vanilla extract

1 cup of apple sauce (I used two of the individual packaged apple sauce that comes in a pack of 6)

1/2 cup of unsweetened soy milk (I used homemade soy milk so the taste might be different from store bought. You can use almond milk as alternative)

Mix all the dry ingredients in a separate bowl.

Cream the margarine and the sugar first then add the oil, apple sauce and soy milk. Mix well.

Combine the dry and wet ingredients and mix well.  After mixing the dry and wet ingredients, the outcome is a little dry and sticky not runny like a batter.  I used a regular loaf pan.

Bake at 350 for 45 mins. It's ready when you stick a toothpick in the bread and comes out clean.
